Pancakes

Ingredients

  • 1 cup self-raising flour
  • 1 teaspoon cinnamon sugar
  • 1 cup buttermilk
  • 1 egg

Method

  1. Combine together the flour and cinnamon sugar with a good pinch of sea salt.
  2. Make a well in the centre and add the milk and egg.
  3. Lightly whisk everything together until smooth.
  4. Set aside and rest, 5 minutes.
  5. Heat a non-stick frying pan over medium heat (you may need to wipe over with a little butter if the pan is well loved).
  6. Pour ¼ cup of batter into the pan to gently form a round shape.
  7. When the underside is golden and bubbles begin to appear on the surface, flip with a spatula and cook until golden. Repeat with remaining batter.
  8. Optional: Serve with honey, bacon, fresh fruit, ice cream or frozen yoghurt, or (my personal favourite) strawberries and maple syrup.
