Ingredients

  • 1/2 cup GF margarine I use an olive based spread
  • 1/2 cup caster sugar
  • 1 regular egg
  • 2 cups GF self-raising flour

Method

  1. Preheat oven to 180C.
  2. Line a baking tray with baking paper.
  3. Using an electric mixer, cream butter and sugar in a bowl until pale and creamy.
  4. Add the egg and mix to combine.
  5. Add the flour and stir until just combined.
  6. Using 2 teaspoons of dough at a time, roll into balls.
  7. Place on prepared tray, allow room for spreading.
  8. Gently press with the tines of a fork.
  9. Bake for 12 to 15 minutes or until lightly golden.
  10. Cool for 5 minutes before serving.
  11. Store in an air-tight container for up to one week.
