Bacon Breakfast Muffins

Ingredients

  • 200 g Primo Short Cut bacon, cooked until crispy and chopped into 1 cm squares
  • 300 g all-purpose flour
  • 3 tsp baking powder
  • 200 g grated cheese (cheddar or tasty)
  • 3 green onions, finely sliced
  • 1 tsp kosher sal
  • ½ tsp ground black peppe
  • 1 egg
  • 100 g Greek yogurt
  • 250 ml milk
  • 40 g melted butter

Method

  1. Preheat oven to 180°C (fan forced) and prepare a 12-hole muffin tin with paper cases or light greasing.
  2. In a large bowl, whisk together flour and baking powder, then stir in cheese, green onions, salt, pepper, and most of the bacon.
  3. In a separate bowl, whisk the egg, yogurt, milk, and melted butter until smooth, then fold into the dry mixture until just combined.
  4. Divide the batter evenly into the muffin tin, then sprinkle with reserved bacon and extra cheese
  5. Bake for 25 minutes or until golden brown and fluffy. Cool slightly before serving warm.
