Ingredients
- 200 g Primo Short Cut bacon, cooked until crispy and chopped into 1 cm squares
- 300 g all-purpose flour
- 3 tsp baking powder
- 200 g grated cheese (cheddar or tasty)
- 3 green onions, finely sliced
- 1 tsp kosher sal
- ½ tsp ground black peppe
- 1 egg
- 100 g Greek yogurt
- 250 ml milk
- 40 g melted butter
Method
- Preheat oven to 180°C (fan forced) and prepare a 12-hole muffin tin with paper cases or light greasing.
- In a large bowl, whisk together flour and baking powder, then stir in cheese, green onions, salt, pepper, and most of the bacon.
- In a separate bowl, whisk the egg, yogurt, milk, and melted butter until smooth, then fold into the dry mixture until just combined.
- Divide the batter evenly into the muffin tin, then sprinkle with reserved bacon and extra cheese
- Bake for 25 minutes or until golden brown and fluffy. Cool slightly before serving warm.
