8 Mission® Tortillas
1/2 teaspoon Olive Oil
2 Green Capsicum, thinly sliced
1 Red Onion, thinly sliced
500g Lean Beef Strips
1-2 small Jalapeño, finely chopped
1 tablespoon Cumin ground
1 tablespoon Chilli Powder
Salt & Pepper
1 1/2 cups Corn Niblets cooked
2 Tomatoes, seeded and chopped
1 Avocado, peeled and diced
2 tablespoons Coriander Leaves, finely chopped
1 teaspoon Cider Vinegar
1 teaspoon Vegetable Oil
Heat oil in large frying pan over medium heat. Add capsicum and onion and sauté until tender, about 5 minutes. Transfer to a bowl and reserve.
Add steak to the frying pan and stir fry 2 minutes, add jalapeño, cumin, chilli powder and salt and pepper to taste. Transfer to heated bowl and reserve.
In a medium sized bowl combine the corn, tomatoes, avocado, coriander, vinegar, and oil. Reserve.
Warm tortillas over gas flame (or microwave as per directions on packet) until they begin to colour. Transfer to a napkin-lined basket.
To serve, arrange the basket of warmed tortillas and the three reserved bowls (capsicum/onions, steak and corn mixture) and have your family assemble their own tacos at the table.
