- 4 large field mushrooms (140g each)
- 4 skinless chicken breasts (150g each)
- 14 cherry tomatoes (17g each)
- 4 tablespoons basil pesto (80g each)
Preheat the oven to 180°c/360F
Place chicken and mushrooms in a baking pan, season with herbal vegetable salt and cracked pepper. Roast for 15 minutes. Add tomatoes and roast for another 5 minutes.
In a small microwaveable dish, warm the pesto for 30 seconds, stirring to distribute the heat.
To serve, place the mushrooms; 1 per plate. Top with chicken, 1 tablespoon pesto, and a roasted tomato.
