- Extra Virgin Olive Oil
- 1 Sweet Potato, cut in quarters with skin left on
- 1/2 Onion, diced
- 1 Garlic Clove, minced
- 300g Beef Mince
- 1/3 cup Corn Kernels
- Lane’s BBQ Original Smoked Finishing Salt
- Lanes BBQ Kinda Sweet
- Fresh Parsley
Preheat oven to 180 degrees and line a baking tray with baking paper.
Boil sweet potato in a large saucepan until softened, approximately 15-20 minutes.
Once boiled, lay potato skin side down on baking tray. Using a potato masher, gently mash the top of the potato. Drizzle with oil and bake for 20 minutes or until roasted.
Meanwhile, heat oil in a medium frying pan on a medium heat.
Add onion and garlic to frying pan and cook until softened, approximately 1 minute. Add beef mince and cook for 5-7 minutes or until browned. Stir through corn and cook until heated through.
- Top smashed sweet potato with mince mixture, parsley, sauce and finishing salt.
