Smashed Sweet Potato With Smoky Minced Beef

Ingredients

  • Extra Virgin Olive Oil
  • 1 Sweet Potato, cut in quarters with skin left on
  • 1/2 Onion, diced
  • 1 Garlic Clove, minced
  • 300g Beef Mince
  • 1/3 cup Corn Kernels
  • Lane’s BBQ Original Smoked Finishing Salt
  • Lanes BBQ Kinda Sweet
  • Fresh Parsley

Method 

  • Preheat oven to 180 degrees and line a baking tray with baking paper.
  • Boil sweet potato in a large saucepan until softened, approximately 15-20 minutes.
  • Once boiled, lay potato skin side down on baking tray. Using a potato masher, gently mash the top of the potato. Drizzle with oil and bake for 20 minutes or until roasted.
  • Meanwhile, heat oil in a medium frying pan on a medium heat.
  • Add onion and garlic to frying pan and cook until softened, approximately 1 minute. Add beef mince and cook for 5-7 minutes or until browned. Stir through corn and cook until heated through.
  • Top smashed sweet potato with mince mixture, parsley, sauce and finishing salt.
