- 400ml coconut milk
- 2 cups self raising flour
- 1 tablespoon honey or agave nectar
- 2 eggs
Combine all ingredients with 1/2 cup (125ml) water, and gently whisk until smooth.
Pour a small amount of mixture into a hot, nonstick frying pan and cook over moderate heat until bubbles appear.
Flip and cook until lightly browned.
Repeat in batches until all the batter is used.
Optional: Serve drizzled with delicious Caramel Sauce, the combination of coconut and caramel just screams ‘DELICIOSO!’. Add grated apple and cinnamon to the batter before cooking.
