Ingredients
- 2x Chicken Thighs
- Lane’s Australia Sweet Lemon Pepper Seasoning
- Lane’s Australia Sorta White
- 2 x Sheets Puff Pastry
- Thin sliced chorizo
- Camembert Cheese
- Cranberry sauce
- 1 x egg
Method
- Preheat your smoker to 150°C.
- Season the chicken with Sweet Lemon Pepper, let sit for 5-10mins for rub to adhere to the meat
- Smoke until the internal temperature has reached at least 74c
- Chop the Chicken, camembert & chorizo and add to a bowl and coat with Sorta White
- Lay out 2 sheets of puff pastry and cut out 8 circlular pieces, top one side with the chicken filling and a dollop of cranberry sauce
- Place the other side on top of the filling, crimp down, poke a hole on the top and brush with egg wash
- Put back into the smoker at 205c and cook until golden brown
- Rest for 5 mins to cool
