4 slices of toast
Baby cos lettuce
- Heat a large non-stick frypan over a high heat.
- Cook the bacon for 2 – 5 minutes on each side or until golden and crisp.
- Meanwhile toast the bread until golden.
- Spread the avocado over two slices of the toast, spread mayonnaise over the remaining two slices of toast.
- Top avocado with 2 bacon slices, some tomato and 2 baby cos leaves.
- Top with the other slice of toast
- Serve immediately.
