Barramundi With Apple Macadamia Salad & Raspberry Vinaigrette.

Ingredients

270g packet frozen Birds Eye Ocean Selections Barramundi
1/2 unpeeled red apple, cut into thin slices
1 small cucumber, sliced into ribbons
1 1/2 cup mixed lettuce leaves
1 1/2 tablespoons roasted macadamia nuts, chopped
1/4 cup fresh raspberries (or thawed frozen raspberries)
2 tablespoons macadamia oil or light olive oil
1 tablespoon white balsamic condiment or lemon juice

Method

  1. Remove 2 frozen Birds Eye Barramundi fillets and thaw following packet directions. Cook following pan cook/BBQ cooking instructions.
  2. Meanwhile, gently toss together apple, cucumber ribbons, lettuce leaves and roasted macadamia nuts.
  3. Place raspberries in a small bowl and crush with a fork. Whisk in macadamia oil and white balsamic condiment.
  4. Serve the barramundi with salad and a drizzle of dressing.
