
Ingredients
- 1 pork loin
- 250 gms salted butter
- 2 tablespoons Sunday Roast by Lane’s BBQ
- 1 Tablespoon Signature by Lane’s BBQ
- 12 chat potatoes
- 4 tablespoons parmesan cheese
Method

Melt the butter with the Sunday Roast rub until the butter turns golden brown.

Inject in the middle of the loin about 3 tablespoons of that melted butter.

Paint the meat with that butter without touching the skin of the pork.

Add coarse salt just to the skin and the pork goes in a 200c oven for 60 to 70 minutes until we have a nice crackle and internal temp is around 72c.

Boil the potatoes and smash them over a tray. To the leftover butter add 1 tablespoon of Signature rub mix well and add this mixture to the potato smash.

Grate some parmesan cheese and in the oven until nice and golden.

Let the pork rest for 20 minutes or more and enjoy with gravy.
